The Henckels Twin Cuisine series stands among the finest cutlery on the market. The grips are well contoured and rest comfortably in the hand. The blades are razor sharp and thanks to a special process of ice-hardening, should remain so for quite some time. For heavy users, the set includes a sharpening steel that should help retain the edges almost indefinitely. This set is comprehensive as it offers the following: 3" Kudamono Hollow Edge Parer 4" Paring/Utility Knife 5" Serrated Utility Knife 6" Utility/Sandwich Knife 7" Hollow-Edge Santoku 8" Chef's Knife Twin-L Kitchen Shears 9" Sharpening Steel Hardwood Block for storage The J.A. Henckels Twin Cuisine 11-Piece Block Set is almost identical but adds a J.A. Henckels Twin Cuisine 2-3/4-Inch Parer/Boner as well as an J.A. Henckels Twin Cuisine 8-Inch Bread Knife. If you believe you would have a use for those knives, you might want to consider buying up. Aside from that, this is a reasonably comprehensive set. Before buying, however, you should consider whether this set makes financial sense for your particular needs. The bundled price of these items is roughly of the 7" Santoku or two of the small knives. So if you don't intend to use some of the knives in the set, it might benefit you to build your own by buying the pieces separately. There are many knives available for a lot less money than the Twin Cuisine series. Unfortunately, cheap knives will never take and hold an edge like this one will. Try them once and you'll be hooked on Twin Cuisine for good. But look closely at your buying options and whether or not this set is the best way to buy into the series. In my particular case, I would drop the 3" Kudamono and the 7" Santoku, but badly wanted the Bread Knife and the J.A. Henckels Twin Cuisine 7-Inch Fillet Knife so it made sense to do it myself. Your own answer may differ, but I would strongly recommend going through the process of thinking about it in advance. It's a significant investment and worth spending the time to make certain you get the most for your money.

Don't let some of these negative reviews get you down .. these are GREAT knives! Prior to purchasing these knives I read the various reviews .. I find Amazon Reviews very helpful! My daughter in law has the Wusthof but I wasn't sure I was willing to pay quite that price since I don't cook as much as she does with her larger family. The Consumer Report information on the Profession S being "Forged because it is very close in form and function to traditionally 'Forged' pieces .. the only difference is that it isn't physically 'forged' from one piece of metal." .. helped my decision also. I then purchased the Henckels and have been just delighted! Right out of the box they were gorgeous! Not a single defect/flaw/scratch .. each one wonderfully sharp .. I tried each knife .. slicing a piece of paper using from tip to handle .. like slicing through butter! Quite frankly I would never abuse a fine piece of china nor a good knife .. so I don't worry about warping or discoloration of the handle .. it has always been my practice to just quickly scrub and dry my knife after use .. even my old cheaper knives still look good after years of use .. I'm so happy to finally have some GOOD knives .. trust me .. I'll take REALLY good care of these knives! Have some pride folks! (And if in time they DO get a bit banged up .. mores the benefit to my family .. it created some good food in the banging up!) I also found the Customer Service Department more than helpful when I called because I wasn't quite sure about one area of registering my product online .. they couldn't have been nicer or more helpful. I do not have huge hands and these fit my hands really nicely .. AND my husband is BIG .. and he likes them also!

I recently bought a Henckels Professional "S" 9-Piece Block set, and I must say that it looks and feels like the real deal. My brother is a French Chef, and he preaches the importance of good knives. So when I decided it was time to get a real set of knives, I bought the best that I could afford. It is right that these knives might not look as good as some cheaper knives, but here the money are not spend on the visual appearance, but the on the actual quality of the blade. The balance on the knives are near perfect, and they just feel so nice in the hand. When the knives comes out of the package they are only moderately sharp. So the first thing I did was to sharpen them, and yes they can hold an edge. I use a Spyderco Triangle Sharpmaker 204MF, and after 5-10 minutes with each knife it was upgraded from a utility edge to pretty close to a razor edge, and they can hold that edge. I must admit that I love these knives, and it is a pleasure to work with them.

Even though I preferred the look of the Pro S series, I went with the 5 star because it's so easy to hold. I love the ergonomic grip and how the knives feel perfectly balanced in your hands. I've owned the set for 3+ years and have not experienced any rusting or discoloration. IMO, it's very low-life of the Cutco rep to bring down the ratings of their competitor's products. Don't listen to their non-sense. The Henkels 5 Star is a superior and high quality set.

I registered for these as a wedding gift, and received the 9 pc set. They are really nice, but within 6 months, there were little orange spots on the blades. 2 years later, I cringe everytime I look at them, thinking how expensive they were and how I hate how they look. I thought they were supposed to be rust proof. I've NEVER put them in the dishwasher. I don't know why they are like this. Maybe we have hard water? I asked the Williams Sonoma sales person 6 months after my wedding, and he said they should not be doing that. (I noticed WS no longer carries the line now, I wonder why.) Has anyone else had this problem?

I purchased the 5 piece set which is a nice combination. However, the handles were marred and discolored. I sent them back and got another set with the same problem. I have since visited many retail stores and seen the same problem. I contacted Henkels and they told me that they were aware of the problem and to try rubbing some oil on them. I did which darken them up but did nothing to the scratches. The blades are excellent, however the 5-star handles have issues. Just check them out carefully before you buy.

This is a wonderful knife set. The sharpener, scissors and wood block are counted as pieces so don't expect 9 knives. These knives are the sharpest I have ever used. They are so sharp that I have cut my fingers twice already. The handles are a good fit for my small hands. The block has room for two more knives and steak knives. I have since purchased the $70 santuku 7 inch, and the $35 4 inch paring knife to complete the set. I put my old steak knives in the steak knife slots since they are still in good shape. It would have been more cost effective to have purchased the 18 piece set rather than adding on individual knives, but I didn't think my husband would be happy seeing the $450 bill for that. This is a great basic set that you can add on to according to your needs. Less expensive sets need to be replaced after a few years, but these knives are built to last. I hope this review helps you make a decision.

This is the first set of 'real' knives that we've bought and have been incredibly satisfied with our purchase for over 5 years now. Moving from cheapo knives or 'Ginsu-type' serrated knives makes these Henkles feel like heaven. Point 1: yes, mom, they are worth the money. Point 2: use the sharpener, often, and don't use it on any other knives. Point 3: the knife that sees the most use from this set is the kitchen shears...seriously. I could go on and expound upon the values of this wonderful product (I have witty stories for each of the points above), but for general household applications, this is a wonderful set of tools and the 9 piece gives you room in the block for pre-existing knives or future purchases. 5 out of 5, easily.

As much as these knives are hyped up, I guess I was expecting a bit more. They feel kind of cheap in your hands and do not have the nice even weight of some other knives I have used. They cut through meats decent but nothing amazing.

I bought some Eversharp Pro steak knifes a couple years ago. The handles for these are slightly different but the set is a good value. I am happy I bought them.

henclels makes good knives. i bought them for that very reason. my son, who recieved them is very satisfied with the knives and the block looks good too! i'll buy henckels again.
