The fruit was cold macerated and then fermented for 10 days in steel vats with pneumo-mechanical breaking up of the cap followed by racking and return. The wine remained on its skins for seven days, was transferred to barrel for eight months for its malolactic fermentation. The wine was aged for 10 months in oak casks and bottled unfiltered..
